PROCESSING SYSTEMS

Being present on the market for more than a century, from its birth, Sordi has lived all developments and innovations in the food processing technology since, acquiring and cultivating its actual know-how. Sordi's technical office is at the customer's disposal for designing and developing of projects and plants for:

milk and processing centres for raw milk, pasteurised and UHT soy (milk preparing stations, plants for pasteurised and UHT milk, tofu type yoghurt production plants)
milk side-products (production plants for yoghurt, butter, cream and mascarpone) eggs (pasteurising lines for egg mix, egg white and yolk)
fruit-juices, tomato and wine (mix preparing stations, UHT and pasteurised juices plants) honey (pasteurising lines)
blending mixing line (preparing stations for creams, desserts, puddings, vegetable cream, thermal process plants, storage and feeding to filling);
pharmaceutical products (ultra filtration plants, pasteurising and UHT plant, storage and process tanks).

CAD 3D software is used for the design allowing a virtual simulation of the whole plant optimising the passage points and regrouping with easy access all the points that need maintenance thus reducing the piping needed for the good working order of the plant.
1. THERMAL FLUID PROCESSING

Sordi designs, manufactures and installs equipment for cooling, heating, pasteurization and UHT processing plants. Plate or tubular heat exchangers according to the product to be processed. One of the features of the UHT STERIPLAK processing plants is its high reliability resulting from an experience of over 30 years (SORDI was the first company worldwide to design and realize a plate-type UHT processing plant). Hundreds of STERIPLAK plants have been installed all over the world

2. CHEESE-MAKING LINES

SORDI designs, manufactures and installs cheese-making lines for the following cheeses from all types of milk:

soft cheeses like Crescenza, Casatella, Caciotta, Taleggio, Feta/Domiati, Brynza, white Bulgarian cheese, Beyaz Peynir, etc. hard and semi-hard cheeses like Gouda, Emmenthal, Pecorino, Grana, Casera, Manchego, Rossijskij, Komstromskoij, etc.
fresh cheeses like Tvorog, Petit Suisse, Kareish, Labneh, etc. herbs cheeses like Gorgonzola, Roquefort, Blue cheese, etc.
pasta filata cheeses like Mozzarella, Scamorza, Pizza cheese, Kaskaval, etc.  

Among the complete range of cheese-making machines, the following lines deserve a special mentioning:

Production lines for soft and white cheeses
For this kind of cheese a special type of cheese vat, "POLISOFT", the special pneumatic transfer system, "S.T.P." for curd and whey and the continuous moulds filling unit, "POLIFORM" have been designed. All of which are characterized by their high standard of mechanization, productivity and sanitizing features, combined with an extremely delicate curd treatment without renouncing at tradition and quality.

Production lines for hard, semi-hard and "pasta filata" cheeses
For these types of cheese, Sordi has been manufacturing, for over 35 years, the POLIMEC polyvalent vat, of which more than 700 units have been installed all over the world. Since 1996 a new polyvalent vat, "CASEUS" has been completely reengineered and restyled. The experience acquired in this sector with the use of new manufacturing engineering and automation solutions, as well as the perfect compliance to the International Standards for the food market machines manufacturing are combined in this vat. The CASEUS comes in different models, from 1.700 to 20.000 litres, with automatic whey suction (optional) and automated standard process recipes (optional). Also the "POLICURD", the curd pressing and portioning machine, has been completely redesigned according to the International standards and to most recent technological innovations.

Cheesemaking by ultra filtration
For these kind of products SORDI has developed and made an innovating technical solution that enables the ultra filtration of milk instead of using the traditional system of whey removal by means of cloths filters. This procedure allows a remarkable reduction of the manual operations and reduces the problems of plant management.

Continuous "Ricotta" production line

SORDI has designed and developed a ricotta production line starting from whey duly prepared. The plant can process up to 4.000 l/h of whey, producing a high quality traditional ricotta with a stable degree of moisture and flavour, ready for the subsequent treatments. The control of the process and the cleaning phases can be completely automatic, minimizing the need of manpower. Another important characteristic is the production of ricotta without direct steam injection with clear advantages both from directives and engineering point of view.

3. YOGHURT PRODUCTION LINES

Sordi designs, realizes and installs production lines for stirred, set or drink yogurt and sour products.

Stirred yoghurt
For this type of yoghurt SORDI manufactures pasteurising and dry matter control lines, starters proportioning, ripening tanks, with the possibility of working in controlled environment, DOSAMIX, in-line dosing and smoothing system of yoghurt/fruits.

Set yoghurt
For this type of yoghurt SORDI manufactures pasteurising and dry matter control lines, starters proportioning, feeding to the in-line cups filling.

Drink yoghurt
For this type of yoghurt SORDI manufactures pasteurising and dry matter control lines, starters proportioning, ripening, with possibility to work in controlled environment, pumps.

4. CIP CHEMICAL CLEANING INSTALLATIONS

Sordi designs and manufactures C.I.P. plants for the process lines and the equipment prepared for cleaning-in-place (CIP). The CIP installations can be divided in two categories:

Dosing installation for concentrated cleaning solutions
This installation can be fixed or mobile and is used when the cleaning is done with solutions used only once. Preparation with one or more components is done in-line, for an entire site, line or one single machine, with automatic control of the cleaning parameters such as: concentration, time phases, temperature etc. (optional). Partial or total cleaning cycles can also be programmed (optional). The cleaning solutions can be heated by steam, hot water or through electrical resistances.

Centralized CIP Installation
This installation is used when cleaning of complete sites, on one or more lines, or single machines is done recycling the solutions. Available for capacities from 6.000 to 60.000 l/h. One or more detergents/disinfectants can be used with automatic control of cleaning parameters (concentration, time phases, temperature etc.). Partial or total cleaning cycles can also be programmed (Optional). Sterilization of the lines or the machines can be done through using heated water or steam (optional). The cleaning solutions can be heated by steam or hot water.

5. SERVICES - KNOW-HOW AND AUTOMATION

The know-how and experience in planning and realization of process plants in the food sector enables SORDI to develop optimum solutions for the process and the operation conditions, taking into consideration all parameters, possible events and the specific variables of the process. Our engineering department follows the customer from the beginning of the project, evaluating in collaboration the best technical, engineering and process solutions, until the final execution. The engineering can be relevant to each single machine, a process line, an entire plant or a construction project, co-operating with the plant manager providing; the relevant layouts and flow diagrams (according to the latest EC standards), the dimensioning and calculation of the required utilities and preparation for a tender or the study of requested quotations. If required, SORDI may act as main-contractor supplying turnkey solutions.
Automation and process control
The long dated experience in planning and realization of process plants in the food field enables SORDI to develop optimised engineering and automation solutions for the process and the operation conditions, taking into account all parameters, possible events and the specific variables of the process.

Process supervision and control
SORDI develops operational software for the supervision, the monitoring, the collection and analysis of data, the process management and control under Windows and other OS. The architecture of this supervision system enables the communication with the most common PLC s, the display of diagrams and historic trends, the alarms control and the messages displayed.
